Among the transient emotions the poet lists mṛti, death. But look closely at what he actually portrays. It is the resolve toward death — the determined striving to die — not literal dying. Literal death itself he certainly does not depict here.
यहाँ मरने का संकल्प ही वर्णन करने योग्य है। साक्षात् मृत्यु निश्चय ही वर्णनीय नहीं।
mṛti is being placed among the vyabhicāri- (sañcāri-) bhāvas, the transient accessory emotions of prakaraṇa 13. Rūpa's qualification is the whole point of the verse: what belongs in the rasa is the impulse toward death, not its accomplishment.
मृति को यहाँ तेरहवें प्रकरण के व्यभिचारी (सञ्चारी) भावों में गिना जा रहा है। रूप गोस्वामी की यह मर्यादा ही श्लोक का सारा तात्पर्य है — रस में जिसका स्थान है वह है मरने की ओर उठता वेग, न कि मृत्यु का घटित हो जाना।

One might object that scripture shows gopīs literally dying — 'Some, shut inside their houses…' (BhP 10.29.9) and verses like it. Jīva sets that aside. The true import of such passages, he says, has already been worked out in the Śrī-Vaiṣṇava-toṣaṇī. That is his point.
'अन्तर्गृहगताः काश्चित्' इत्यादि (श्लोकों) का तात्पर्य तो श्रीवैष्णवतोषणी में समझा दिया गया है — ऐसा अभिप्राय है।
Why cited: the apparent scriptural case that gopīs literally died — adduced only to defer it: since its true sense is settled in the Vaiṣṇava-toṣaṇī, it does not force literal death into the definition.

Why is literal death not portrayed? Because Kṛṣṇa's beloveds — whose love runs in one of its three grades, samartha, samañjasa, or sādhāraṇa — are eternally perfect. For such eternal companions actual dying simply cannot occur. That impossibility is exactly what the verse's 'na hi' is saying.
यह मृत्यु — अर्थात् प्राणत्याग — वर्णनीय नहीं। क्योंकि समर्थ, समञ्जस और साधारण स्थायीभाव वाली श्रीकृष्ण की प्रेयसियाँ नित्यसिद्ध हैं। अतः उनकी मृत्यु सम्भव ही नहीं।
The three grades name the standing love (sthāyi-bhāva) of Kṛṣṇa's beloveds in Ujjvala-nīlamaṇi: samartha-rati (the Vraja gopīs, the fullest), samañjasa-rati (the queens of Dvārakā), and sādhāraṇa-rati (ordinary attraction, as in Kubjā). Viśvanātha's point turns on all three being nitya-siddha, eternally established, for whom death is not a real event.

Two scriptural cases look like the beloveds literally dying — the gopīs 'shut inside their houses' (BhP 10.29.9) and 'Kṛṣṇa's wives entered the fire' (BhP 11.31.20). Their explanation, Viśvanātha says, should be looked up in the Vaiṣṇava-toṣaṇī, the Sandarbhas, and works of that kind.

But someone may press: not every beloved is eternal — for certain ones who are practically still sādhakas, death actually is possible. Viśvanātha grants it, and gives a second reason. Even where death can occur, it is not portrayed, because dwelling on death is inauspicious. So by one route or the other, literal death stays out of the picture.
कहीं-कहीं साधक-कोटि की कुछ स्त्रियों की मृत्यु सम्भव भी हो, तो भी अमंगल होने के कारण वह वर्णनीय नहीं — ऐसा आशय है।
Note the two-tier answer: for the eternal beloveds death is impossible (s2), so it cannot be portrayed; for the sādhaka-type ones death is possible but inauspicious, so it is not portrayed. The definition holds on both counts.
यहाँ उत्तर दो स्तरों का है — नित्यसिद्ध प्रेयसियों के लिए मृत्यु असम्भव है (s2), अतः उसका वर्णन नहीं हो सकता; साधक-कोटि की स्त्रियों के लिए मृत्यु सम्भव तो है पर अमंगल है, अतः उसका वर्णन नहीं किया जाता। दोनों ही दृष्टियों से लक्षण अक्षुण्ण रहता है।
